- 1 lb lean ground beef
- 1 can (15 oz) black beans, rinsed and drained
- 6 flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 1 cup diced bell peppers (mixed colors)
- 1 medium onion, chopped
- 2 tbsp taco seasoning
- Sour cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, sauté the chopped onion and bell peppers until softened (about 5 minutes).
- Add the ground beef to the skillet and cook until browned, breaking it apart as you go. Drain excess fat if needed.
- Stir in the black beans, salsa, and taco seasoning. Let simmer for 3-5 minutes.
- In a baking dish, layer tortillas at the bottom followed by half of the beef mixture and one cup of cheese. Repeat layers with remaining ingredients.
- Cover with foil and bake for 25 minutes; remove foil for the last 10 minutes to let cheese bubble up.
Notes
- Customize your casserole using pinto beans instead of black beans or adding extra veggies like corn or zucchini.
- For a spicier kick, include diced jalapeños between the layers.
