- 2 cups ripe tomatoes, diced (Roma or vine-ripened)
- 1 cup fresh basil leaves, chopped
- 3 garlic cloves, minced
- 4 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Arrange chicken breasts in a baking dish; drizzle with olive oil and season with salt and pepper.
- In a bowl, mix diced tomatoes, minced garlic, chopped basil, balsamic vinegar, and remaining olive oil.
- Spoon the tomato mixture over the chicken until fully covered. Sprinkle additional salt if desired.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). If using cheese, add it during the last 5 minutes of baking.
- Serve warm with crusty bread or pasta.
