Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups ripe tomatoes, diced (Roma or vine-ripened)
  • 1 cup fresh basil leaves, chopped
  • 3 garlic cloves, minced
  • 4 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Arrange chicken breasts in a baking dish; drizzle with olive oil and season with salt and pepper.
  3. In a bowl, mix diced tomatoes, minced garlic, chopped basil, balsamic vinegar, and remaining olive oil.
  4. Spoon the tomato mixture over the chicken until fully covered. Sprinkle additional salt if desired.
  5. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). If using cheese, add it during the last 5 minutes of baking.
  6. Serve warm with crusty bread or pasta.
