- 4 large eggs
- 1 cup sharp cheddar cheese, shredded
- 1 cup fresh spinach, chopped
- 1 cup diced tomatoes (fresh or canned)
- 1 small onion, diced
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
- Slice the tops off the bell peppers and remove seeds; place them upright in the baking dish.
- In a skillet over medium heat, add olive oil, onions, and spinach. Sauté for 3-5 minutes until soft.
- In a bowl, whisk together eggs, diced tomatoes, salt, pepper, and half of the cheddar cheese until well combined.
- Fill each pepper with the egg mixture and sprinkle remaining cheese on top.
- Bake for 25-30 minutes until peppers are tender and egg is set.
