Ingredients

  • 1 lb pizza dough (store-bought or homemade)
  • 4 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup bell peppers, chopped (any color)
  • 1 cup fresh spinach, roughly chopped
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano or basil

Instructions

  1. Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface into a 12-inch circle and place it on a parchment-lined baking sheet.
  2. Drizzle olive oil over the dough, spreading it evenly.
  3. Sprinkle shredded mozzarella cheese across the surface of the dough.
  4. Add chopped bell peppers and spinach on top of the cheese. Create small wells in the toppings and crack an egg into each well.
  5. Season with salt, pepper, and dried oregano or basil.
  6. Bake for 12-15 minutes until the crust is golden brown and the egg whites are set but yolks remain runny.
  7. Remove from oven, let cool slightly, slice, and serve hot.
