Ingredients

  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 large egg or flax egg (1 tbsp flaxseed meal + 3 tbsp water)
  • 1/2 green bell pepper, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mash the black beans until mostly smooth but still slightly chunky.
  2. Mix in the onion, garlic, bell pepper, cumin, chili powder, salt, and pepper until well combined.
  3. Add the breadcrumbs and either egg or flax egg; stir until the mixture holds together.
  4. Shape into patties about 1/2 inch thick.
  5. Heat oil in a skillet over medium heat and cook patties for 4-5 minutes on each side until golden brown.
  6. Serve immediately on buns or lettuce wraps with your favorite toppings.
