- 1 can (15 oz) black beans, rinsed and drained
- 1/2 cup breadcrumbs (plain or seasoned)
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 large egg or flax egg (1 tbsp flaxseed meal + 3 tbsp water)
- 1/2 green bell pepper, finely chopped
- Salt and pepper to taste
Instructions
- In a large bowl, mash the black beans until mostly smooth but still slightly chunky.
- Mix in the onion, garlic, bell pepper, cumin, chili powder, salt, and pepper until well combined.
- Add the breadcrumbs and either egg or flax egg; stir until the mixture holds together.
- Shape into patties about 1/2 inch thick.
- Heat oil in a skillet over medium heat and cook patties for 4-5 minutes on each side until golden brown.
- Serve immediately on buns or lettuce wraps with your favorite toppings.

- For added crunch, consider mixing in corn chips instead of breadcrumbs.
