- 2 lbs chuck roast, cut into cubes
- 1 can (14.5 oz) diced tomatoes
- 4 dried guajillo peppers, soaked in hot water
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- ¼ cup fresh cilantro, chopped (for garnish)
- 4 cups low-sodium beef broth
- Juice of 2 limes
Instructions
- Marinate the cubed chuck roast in spices and refrigerate for at least an hour.
- In a large pot over medium heat, sauté the diced onion until translucent.
- Add the diced tomatoes, softened guajillo peppers (drained), minced garlic, cumin, oregano, salt, and pepper to the pot; stir well.
- Pour in the beef broth and add the marinated chuck roast. Cover and simmer on low heat for about 3 hours until fork-tender.
- Shred the beef directly in the pot using two forks. Serve warm in corn tortillas topped with chopped cilantro and a squeeze of lime juice.
