Description

Indulge in this creamy berry cheesecake, a luscious dessert that beautifully balances sweet and tart flavors, making it a showstopper for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tsp gelatin powder
  • 4 tbsp hot water

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan and bake for 8 minutes until lightly golden. Let cool.
  2. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar while continuing to beat until fluffy. Stir in sour cream and vanilla extract until well combined.
  3. Gently fold in the fresh berries. Dissolve gelatin powder in hot water according to package instructions and mix it into the berry mixture.
  4. Pour the berry filling over the cooled crust and smooth out the top with a spatula. Refrigerate for at least 4 hours or overnight.
  5. Once set, run a knife around the edges before removing from the pan. Top with extra fresh berries before serving.

Notes

  • Feel free to swap in your favorite berries or add lemon zest for an extra zing.
  •  To prevent cracks, consider using a water bath during baking.
