- 1 ½ cups graham cracker crumbs
- ⅓ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 1 cup sour cream
- 2 tsp vanilla extract
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 2 tsp gelatin powder
- 4 tbsp hot water
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan and bake for 8 minutes until lightly golden. Let cool.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar while continuing to beat until fluffy. Stir in sour cream and vanilla extract until well combined.
- Gently fold in the fresh berries. Dissolve gelatin powder in hot water according to package instructions and mix it into the berry mixture.
- Pour the berry filling over the cooled crust and smooth out the top with a spatula. Refrigerate for at least 4 hours or overnight.
- Once set, run a knife around the edges before removing from the pan. Top with extra fresh berries before serving.
Notes
- Feel free to swap in your favorite berries or add lemon zest for an extra zing.
- To prevent cracks, consider using a water bath during baking.
