Description

Ingredients

  • 1 lb beef chuck roast, cut into bite-sized pieces
  • 4 cups low-sodium beef broth
  • 8 oz wide egg noodles
  • 2 medium carrots, sliced thinly
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt and pepper. In a pot, sear the beef until browned on all sides. Remove from the pot.
  2. In the same pot, sauté minced garlic and grated ginger until fragrant.
  3. Add beef broth and soy sauce to the pot; bring to a boil. Stir in sliced carrots and return the beef to the pot. Reduce heat and simmer for about 1 hour.
  4. Cook egg noodles according to package instructions until al dente, then drain.
  5. Stir cooked noodles and chopped green onions into the soup just before serving. Drizzle with sesame oil.

  • Add vegetables like bok choy or mushrooms for extra flavor.
