- 1 lb beef chuck roast, cut into bite-sized pieces
- 4 cups low-sodium beef broth
- 8 oz wide egg noodles
- 2 medium carrots, sliced thinly
- 4 green onions, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper. In a pot, sear the beef until browned on all sides. Remove from the pot.
- In the same pot, sauté minced garlic and grated ginger until fragrant.
- Add beef broth and soy sauce to the pot; bring to a boil. Stir in sliced carrots and return the beef to the pot. Reduce heat and simmer for about 1 hour.
- Cook egg noodles according to package instructions until al dente, then drain.
- Stir cooked noodles and chopped green onions into the soup just before serving. Drizzle with sesame oil.

- Add vegetables like bok choy or mushrooms for extra flavor.
