Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • Juice of 1 lime

Instructions

  1. Rinse shrimp under cold water and pat dry with paper towels.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of panko and cornstarch.
  3. Dip each shrimp in flour, then eggs, and coat in the panko mixture.
  4. Heat oil in a skillet over medium-high heat. Fry shrimp in batches until golden brown (about 2-3 minutes per side).
  5. In a bowl, whisk together mayonnaise, sriracha sauce, honey, and lime juice until smooth.
  6. Toss fried shrimp in the sauce until well coated.

Notes

  • For added crunch, consider double-coating the shrimp by repeating the dipping process.
