Ingredients
Scale
- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 cup milk (or non-dairy alternative)
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp melted butter (or coconut oil)
Instructions
- Mash the ripe bananas in a bowl until smooth.
- In a separate bowl, whisk together flour, baking powder, and a pinch of salt.
- In another bowl, mix mashed bananas with eggs, milk, and vanilla extract until smooth.
- Gently combine the wet ingredients into the dry ingredients; lumps are okay for fluffiness.
- Preheat a non-stick skillet over medium heat and melt a bit of butter in it.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top, then flip and cook until golden brown.
