Scale
- 3 ripe bananas (mashed)
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 large egg
- ⅓ cup vegetable oil
- ½ cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease it.
- In a large bowl, mash the ripe bananas until smooth, leaving some small chunks for texture.
- Add sugar, egg, and vegetable oil to the mashed bananas, mixing until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture using a spatula until just combined; avoid overmixing.
- Gently stir in the chocolate chips.
- Fill muffin tins three-quarters full with batter and bake for 18-22 minutes, or until golden brown and a toothpick inserted comes out clean.
Notes
- Feel free to add walnuts or pecans for added crunch or substitute half of the flour with whole wheat flour for a healthier version.
- For an extra flavor twist, try adding a teaspoon of vanilla extract or a pinch of cinnamon.
