Description

Ingredients

  • 1/2 cup balsamic vinegar
  • 2 bell peppers, sliced (mixed colors)
  • 1 medium zucchini, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tsp dried Italian herbs (basil, oregano, or thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly coat a large baking dish with olive oil.
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, dried herbs, salt, and pepper.
  3. Place chicken breasts in the baking dish and surround them with sliced bell peppers, zucchini, and onion wedges. Drizzle the marinade over everything.

  5. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
