Description

Baked Falafel is a delightful, crispy snack made from chickpeas, herbs, and spices. Perfectly baked for a healthier twist, it’s great in pita or as a standalone treat.


Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp baking powder
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil (plus extra for drizzling)
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, blend chickpeas, parsley, cilantro, garlic, cumin, baking powder, salt, pepper, and lemon juice until coarse.
  3. Transfer to a bowl and fold in panko breadcrumbs gently.
  4. Form small balls (about golf-ball size) and place them on the baking sheet.
  5. Drizzle olive oil over each ball for added crispiness.
  6. Bake for 25-30 minutes until golden brown. Allow to cool slightly before serving.

Notes

  • For a twist on flavor, substitute chickpeas with black beans or kidney beans.
  • Chill the falafel mixture before shaping to help them hold together better.
