Description

Savor the creamy delight of avocado toast topped with a perfectly cooked egg, transforming breakfast into a gourmet experience that’s quick and nutritious.

Ingredients

Scale
  • 1 ripe avocado
  • 2 large eggs
  • 2 slices sourdough or whole grain bread
  • ¼ tsp sea salt (to taste)
  • ¼ tsp black pepper (to taste)
  • 1 tbsp freshly squeezed lemon juice

Instructions

  1. Toast the bread until golden brown.
  2. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. Add lemon juice, salt, and pepper to the avocado; mash until creamy yet chunky.
  4. In a nonstick skillet over medium heat, add a little oil or butter. Crack in the eggs and cook until whites are set and yolks remain runny.
  5. Spread mashed avocado generously on each slice of toast.
  6. Top each slice with a cooked egg straight from the skillet.
  7. Optionally sprinkle with extra salt, pepper, chili flakes, or fresh herbs.

Notes

  • For an added crunch, consider topping your dish with sliced radishes or cherry tomatoes.
  • To make it vegan, substitute scrambled tofu for eggs.
