Ingredients

  • 2 ripe avocados
  • 4 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 6 large butter or romaine lettuce leaves
  • 2 green onions, chopped (optional)
  • Fresh dill (optional)

Instructions

  1. Hard-boil the eggs by placing them in a saucepan, covering with water, bringing to a boil over medium heat. Cover and turn off the heat; let sit for 10-12 minutes. Cool under cold water, then peel.
  2. Scoop avocados into a bowl and mash until creamy yet chunky.
  3. Chop hard-boiled eggs and add to the mashed avocado along with Greek yogurt, lemon juice, salt, pepper, and green onions. Mix well.
  4. Rinse lettuce leaves under cold water and pat dry with paper towels.
