- 2 ripe avocados
- 4 hard-boiled eggs
- 1/2 cup plain Greek yogurt
- 2 tbsp fresh lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper
- 6 large butter or romaine lettuce leaves
- 2 green onions, chopped (optional)
- Fresh dill (optional)
Instructions
- Hard-boil the eggs by placing them in a saucepan, covering with water, bringing to a boil over medium heat. Cover and turn off the heat; let sit for 10-12 minutes. Cool under cold water, then peel.
- Scoop avocados into a bowl and mash until creamy yet chunky.
- Chop hard-boiled eggs and add to the mashed avocado along with Greek yogurt, lemon juice, salt, pepper, and green onions. Mix well.
- Rinse lettuce leaves under cold water and pat dry with paper towels.
- Spoon generous amounts of the mixture onto each lettuce leaf and enjoy immediately!
